Pilgrim’s Cake (Torta Coi Bischeri)

This snack is known in Italian as Torta Coi Bischeri. It’s an important and tantalizing delicacy usually made during the religious festive season in Pisa, like the feast of the Crucifix of Miracle that is also known as the elevation of the cross and the Ascension.

The dish originated in Potasserichio before parsing to places like Pisa based on the landmark. In the 16th century, it was mostly prepared to welcome pilgrims that arrived from Franciegena for the celebration, hence the name pilgrims’ cake.

Its outer part, known as bischeri, decorates the cake by giving an appealing look, while it’s intricated with rice, chocolate, fruit, and pine nuts.

Pici Pasta

This is not like the pasta you are familiar with. Having a taste of this delicacy will make you crave more, possibly turning you to Oliver Twist.

The food originated from the Etruscans. A tomb in the ancient city of Tarquinia has a painting that depicts a feast scene where an attendant is carrying a bowl of pasta. Moreover, the pasta is still as it was in ancient times, except that people vary their method of serving the dish.

The pasta is made of flour, salt, and water, and in the process of serving the meal, some serve theirs with aglione sauce, ragu, bread crumbs, and even eggs. Whichever way it’s served, it never loses its deliciousness.

With this meal served, your stay in the city will be such a memorable experience, don’t miss giving it a try!

Cinghiale (Wild boar)

This is a traditional food in Pisa, and it’s finely cooked for hours. The meat is gotten from wild boar: although you rarely see boar meat when you come across it. Try and have a bite and see how delicious it will taste.

The meat is finely simmered and prepared to make the meat soft. The more time you simmer the meat, the more the taste and flavor surface.

Most Italians enjoy this meal a lot. There no much history behind its origin, except the wild boar where the meat is derived. You can see the meal in many pastry shops in most city corners. However, it’s usually served with pasta or a stew.

Cecina

It’s a tasty flatbread that’s round in shape, like a pizza. This dish will be served with just four ingredients to satisfy the carving mouth. Its ingredients are chickpea flour, water, salt, and virgin olive oil.

Most legend holds that the delicacy started around 1284 when Pisa and Genoa were at the battle of Meloria when the Genoese sailors in a ship faced a storm: the bags of chickpea and virgin olive oil in the ship fell and was mixed with the seawater.

The sailors liked the mixture it turned to and left it to dry under the sun, which later became a tasty and crispy meal. Thence, the dish spread to other places in Pisa and Genoa.

It’s definitely a great snack to try out because it’s tastier than its sounds. With its crispiness, you will always be pushed to request more.

Crispy Fettunta Bread

If you love to eat bread as I do, you shouldn’t miss this while in Pisa. Usually, in Pisa, once it’s the season of first olive oil, the Pisans make a fettunta which in local dialect is referred to as fetta and unta, meaning (oiled slice). That is an oiled slice of bread. It’s prepared simply with a garlic clove and drizzled with olive oil.

This bread serves best as an appetizer and hunger quench so never forget to try it out and have a taste of crunchy bread like this!

These are not the only food, you can eat in Pisa but they are certainly some of the best.
